Today, a new generation of street-food lovers are lining up at food trucks and food trailers like never before. Like so many other popular trends, they are the latest version of a long-standing part of culture around the world. PIG-CASSO’S caters for all events large and small, from weddings and birthdays to festivals. We offer food that is gourmet, modern and delicious. Using fresh, local produce to create a seasonal menu, we are always looking to develop new ideas and recipes.

THE SMOKING PROCESS

EXTRAORDINARY STREET FOOD FOR YOUR EVENT

Using a traditional Oklahoma Joe, reverse flow wood smoker, made from 5mm thick steel, we are able to offer a range of products. A blend of English Oak and whiskey-soaked wood chips provides the perfect light and sweet smoke flavour that we are looking for. Our meat is seasoned with ‘PIG-CASSOS’s Dry Rub’, which is a blend of 8 secret spices. Our locally sourced pork is then smoked for 12 hours! Unlike other smoke houses, Jimmy and Steve take pride in the fact that we smoke our meat using the traditional method (with actual fire)! Our trailer when catering at events is 12ft by 6ft.

We purchase all of our meat from Day’s of Buckden, a local independent butchers found in the heart of Cambridgeshire. We want to ensure that as our small business grows, we continue to contribute to the local community.
